  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 tablespoons eggnog
  • 1 large egg
  • 10 tablespoons unsalted butter (for filling)
  • 2 cups confectioners’ sugar
  • 3 tablespoons eggnog (for filling)
  • 1/4 teaspoon pure vanilla extract
  • Pinch each salt, ground cinnamon, and ground nutmeg

Instructions

  1. In a medium bowl, whisk together flour, cinnamon, nutmeg, oats, baking soda, and salt.
  2. In another large bowl, beat softened butter and brown sugar until creamy.
  3. Add egg, eggnog, and vanilla extract; mix until well combined.
  4. Gradually add dry ingredients to wet ingredients; mix until combined.
  5. Chill dough for at least two hours.
  6. Preheat oven to 350°F (177°C) and prepare baking sheets.
  7. Shape chilled dough into balls and place on prepared sheets.
  8. Bake for 11-12 minutes until lightly browned but soft in the center.
  9. While cooling, prepare cream filling by beating softened butter and confectioners' sugar until smooth; add eggnog and vanilla extract.
  10. Assemble by spreading cream filling between two cookies.
