  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg (room temperature)
  • 1 & 1/4 cups old fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk
  • 1/4 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream the softened butter with brown sugar and granulated sugar until smooth. Add egg and vanilla; mix until fluffy.
  3. Gradually blend in oats, flour, cinnamon, nutmeg, baking soda, and salt until combined.
  4. Use a cookie scoop to portion out dough onto the prepared baking sheet. Flatten each ball slightly.
  5. Bake for about 10 minutes until soft but not overbaked. Allow cooling on the sheet for about 20 minutes before transferring to a wire rack.
