  • 1/3 cup all-purpose flour
  • 1/2 cup chilled unsalted butter
  • 6 to 8 large apples (about 3 1/2 pounds, I used a mix of Granny Smith and Honeycrisp)
  • 1/3 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 4 tablespoons cold unsalted butter, cut into 1/4-inch dice
  • 1 TBSP plus 1 tsp cornstarch
  • 2 tsp vanilla extract
  • 1 tsp dry pectin (or an extra 1/2 tsp cornstarch)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp kosher salt
  • 1 cup brown sugar
  • 1/2 cup light corn syrup
  • 3 tbsp unsalted butter
  • 1 1/2 tsp kosher salt
  • 1/2 cup heavy cream
  • 1 TBSP spiced vanilla extract (alcohol-free)

Instructions

  1. Make the crust: Blend flour, salt, and sugar in a food processor. Add chilled butter until crumbly; add ice water until dough forms. Chill.
  2. Prepare crumb topping: Mix sugars, cinnamon, salt, and flour; add butter until crumbly. Chill.
  3. Cook apples: Sauté apples with sugar in two pans until golden. Let cool slightly.
  4. Combine filling: Mix sautéed apples with brown sugars, cornstarch, spices, and vanilla extract.
  5. Assemble pie: Pour apple mixture into crust; sprinkle crumb topping over it.
  6. Bake: Place on a sheet pan; cover with foil halfway through baking.
  7. Make sauce: Whisk together brown sugar, corn syrup, butter, and salt in a saucepan; stir in cream.
  8. Serve: Drizzle half of the sauce over pie and serve remaining sauce alongside.
