  • 6 large eggs (separated)
  • 1.5 tablespoons lemon juice
  • 2 teaspoons vanilla extract
  • 3/4 cup granulated sugar (divided)
  • 3/4 cup cake flour
  • 2.5 tablespoons corn starch
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar

  2. Melt cream cheese, butter, and milk together in a microwave-safe bowl until smooth.
  3. Stir in egg yolks, lemon juice, vanilla extract, and half the sugar until combined.
  4. Sift in cake flour, corn starch, and salt; whisk until smooth.
  5. Whip egg whites to soft peaks; gradually add cream of tartar and remaining sugar until stiff peaks form.
  6. Gently fold meringue into batter in two additions.
  7. Pour batter into the prepared pan; place it in a water bath.
  8. Bake at 400°F for 18 minutes, then lower to 320°F for an additional 12 minutes.
