  • 1 large sweet potato (12 ounces), diced
  • 1 lb flat iron steak, diced
  • 3 tbsp olive oil
  • 2 bell peppers, diced
  • 2 cloves garlic, minced
  • 2 tbsp coconut aminos
  • Sea salt and cracked black pepper to taste

Instructions

  1. Microwave the diced sweet potato sprinkled with salt for 4-6 minutes until tender.
  2. Heat 2 tablespoons of olive oil in a skillet over high heat and sear the steak bites for about 10 minutes until medium-cooked.
  3. Remove the steak from the skillet and set aside.
  4. Add another tablespoon of olive oil to the same skillet; cook sweet potatoes until golden brown (about 3-4 minutes).
  5. Sauté minced garlic for about a minute, then add bell peppers and green onions; cook for an additional 3-4 minutes.
  6. Return the steak to the skillet and stir in coconut aminos; heat through for another minute.
  7. Top with fresh cilantro before serving.
