  • 1 1/2 cups chopped asparagus
  • 1 1/2 cup chopped broccoli
  • 1 cup chopped bell peppers
  • 1 cup corn (fresh or frozen)
  • 1 cup diced onion
  • 1 cup shredded carrots
  • 1 clove garlic (minced)
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup vegetable broth
  • 1/4 cup sour cream
  • 1/4 cup grated cheddar
  • 2 cups Alexia Sweet Potato Puffs (frozen)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped asparagus, broccoli, bell peppers, corn, onion, carrots, and minced garlic for about 5 minutes until tender.
  3. In a separate saucepan, melt butter over medium heat. Whisk in flour to form a roux and gradually add vegetable broth until thickened. Stir in sour cream.
  4. Combine the sautéed veggies with the sauce and transfer to an 8×8 baking dish. Top with grated cheddar cheese and sweet potato puffs.
  5. Bake for 30 minutes until bubbly and golden brown.
