  • 15 ounces black beans (one can, drained and rinsed)
  • 9 ounces corn (one can, drained and rinsed)
  • 2 garlic cloves (minced)
  • 1 tablespoon taco seasoning
  • Kosher salt and ground pepper (to taste)
  • 2 cups brown rice or cooked quinoa
  • 2 cups cherry tomatoes (quartered)
  • 1 hass avocado (sliced)
  • Lime wedges (to serve with)
  • Plain Greek yogurt or sour cream (to serve with)
  • Fresh cilantro (to garnish)

Instructions

  1. In a large non-stick pan, heat olive oil over medium heat. Add drained black beans and corn along with minced garlic and taco seasoning. Sauté for 3-4 minutes until combined.
  2. Divide cooked brown rice or quinoa into four bowls. Top each with the bean mixture, quartered cherry tomatoes, and sliced avocado.
  3. Finish with a dollop of Greek yogurt, lime juice, and fresh cilantro.
