  • 1 lb (450g) beef stew meat
  • 1 tablespoon olive oil
  • 1 large onion
  • 3 cloves garlic
  • 3 carrots
  • 3 celery stalks
  • 2 potatoes
  • 1 can diced tomatoes (14.5 oz)
  • 6 cups beef broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 cups egg noodles or pasta of choice

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the beef stew meat on all sides, then set aside.
  2. In the same pot, sauté diced onion, carrots, and celery for about 5 minutes until softened. Add minced garlic and cook for another minute.
  3. Return the browned beef to the pot and add diced tomatoes (with juice), beef broth, water, thyme, basil, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat to low and cover; simmer for about 45 minutes until beef is tender.
  5. Add diced potatoes and frozen vegetables; simmer for an additional 15-20 minutes until potatoes are tender.
  6. Cook egg noodles separately according to package instructions; drain.
  7. Stir cooked noodles into the soup before serving and garnish with fresh parsley.
