  • 1 (15 oz) can of chickpeas (no salt added; liquid needed)
  • 1/4 tsp cream of tartar
  • 1 tsp lime juice (or lemon juice)
  • 1 tsp tapioca flour
  • 3/4 cup powdered Erythritol (or icing sugar)
  • 1 2/3 cups shredded unsweetened coconut
  • Melted vegan chocolate (optional)

Instructions

  1. Prepare aquafaba by simmering the liquid from the chickpeas until slightly reduced. Cool it down.
  2. Whip the aquafaba with cream of tartar and lime juice until stiff peaks form.
  3. Gradually add powdered Erythritol while continuing to whip until glossy.
  4. Gently fold in shredded coconut.
  5. Scoop onto a lined baking sheet and bake at 300°F (150°C) for approximately 30 minutes or until golden.
  6. Allow to cool completely before enjoying.
