  • ¼ teaspoon baking soda
  • ½ cup vegan butter
  • ¼ cup shortening
  • 1 teaspoon vanilla bean paste
  • ½ teaspoon rosewater
  • 1 ½ cups powdered sugar
  • 2 tablespoons dried rose petals (optional, for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix oat/almond milk, sugar, olive oil, and vanilla bean paste until well combined.
  3. In another bowl, whisk together pastry flour, salt, cardamom, baking powder, and baking soda.
  4. Gradually add the dry mixture to the wet mixture while stirring gently until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for about 22 minutes or until a toothpick comes out clean.
