  • 1/3 cup melted coconut oil
  • 1 tbsp methylcellulose
  • 2 tsp beef-flavored broth base
  • 1/4 cup water (for the fat puck)
  • 1/4 tsp methylcellulose (for the fat puck)
  • 1 tsp beetroot powder
  • 1/2 tsp paprika
  • 1 cup water (for the sausage base)
  • 1 tbsp maple syrup
  • 1 tsp dried sage
  • 1 tsp salt
  • 1 tsp brown sugar
  • Pinch crushed red pepper flakes
  • Pinch ground cloves
  • 1 cup water (for assembling)
  • 1 tsp cornstarch

Instructions

  1. Prepare the fat puck: Blend 1/4 cup water and methylcellulose, then slowly add melted coconut oil. Freeze until solid.
  2. Mix the sausage base: In a bowl, combine TVP, pea protein, broth base, beetroot powder, and seasonings. Let sit for 10 minutes.
  3. Grate the frozen fat puck into the mixture. Stir until combined.
  4. Form patties using a cornstarch-water mixture for shaping.
  5. Cook in a lightly oiled pan over medium heat for about 3-4 minutes on each side until golden brown.
