  • ¼ cup unsalted butter, cold and cut into small pieces (for streusel topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix egg, milk, melted butter, and vanilla until well combined.
  4. Pour wet ingredients into dry ingredients and stir gently until just moistened.
  5. Fold in chopped apples.
  6. For the streusel topping, mix flour, brown sugar, and cinnamon in a small bowl; cut in cold butter until crumbly.
  7. Divide batter among muffin cups and sprinkle streusel on top.
