  • 4 garlic cloves (sliced)
  • 1 medium onion (diced)
  • 3 celery ribs (chopped)
  • 2 (15oz) cans cannellini beans (drained)
  • 1 large russet potato (cut into 1 inch cubes)
  • 1/4 cup sliced sun-dried tomatoes
  • 2 tbsp capers (with juice)
  • 6 cups chicken broth
  • 1 (14.5oz) can coconut milk or milk of choice
  • Fresh baby spinach
  • Italian parsley (finely chopped)

Instructions

  1. In a large soup pot, sauté the spicy Italian sausage until browned. Add garlic, onion, and celery; sauté for another 5 minutes.
  2. Stir in cannellini beans, potato cubes, sun-dried tomatoes, capers, chicken broth, and coconut milk. Mix well.
  3. Bring soup to a boil then reduce heat to low. Cover partially and let simmer for 20-30 minutes until potatoes are tender.
  4. Remove from heat; season with salt and pepper to taste. Stir in fresh spinach until wilted.
