  • 500 g skinless boneless chicken thighs
  • 30 g unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large celery stems, finely sliced
  • 2 packed cups baby spinach, chopped
  • 0.5 cup sun-dried tomato strips
  • 4 cups low-sodium chicken stock/broth
  • 1 cup thickened cream
  • 250 g small pasta shells
  • 1 cup grated Parmesan cheese
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tsp cornflour/cornstarch
  • 2 tsp water (for thickening)

Instructions

  1. Season chicken thighs with salt and pepper. In a pot over medium heat, melt butter and brown the chicken for about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté onions, garlic, and celery until softened (3-4 minutes).
  3. Stir in sun-dried tomatoes and spinach until spinach wilts.
  4. Add chicken stock and water to the pot; return chicken and simmer for about 10 minutes.
  5. Mix in pasta shells; cook until tender (8-10 minutes).
  6. Stir in thickened cream and Parmesan cheese until well combined.
  7. Thicken soup using cornflour mixed with water; simmer until desired consistency.
