  • 1.5 cups fresh breadcrumbs
  • 3 tablespoons milk
  • 1 large egg
  • 1.5 pounds ground turkey
  • 2 tablespoons ghee or unsalted butter
  • 1 (15-ounce) can organic pumpkin puree
  • 1.75 cups chicken stock
  • 0.25 cup heavy cream
  • Fresh sage leaves

Instructions

  1. Preheat the oven to 375°F (190°C). In a bowl, combine breadcrumbs and milk; let soak.
  2. In a separate bowl, mix soaked breadcrumbs with onion, garlic, herbs, parmesan, egg, turkey, salt, and pepper until combined. Form into meatballs.
  3. Place meatballs on a parchment-lined baking sheet and bake for about 20 minutes or until golden and cooked through.
  4. For the sauce, heat ghee and olive oil in a skillet; add onion and garlic until translucent. Stir in pumpkin puree and seasonings; add chicken stock and cream.
