  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup cooled espresso
  • 8 oz mascarpone cheese
  • 1/2 cup heavy cream
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream the softened butter and sugar until fluffy. Beat in eggs one at a time.
  3. In another bowl, whisk flour, baking powder, and salt. Combine milk with cooled espresso.
  4. Alternate adding dry ingredients and liquid to the butter mixture until just combined.
  5. Fill muffin cups two-thirds full with batter and bake for 15-20 minutes or until a toothpick comes out clean.
  6. For the espresso soak, heat remaining espresso with sugar until dissolved; brush over warm cupcakes.
  7. Beat mascarpone until smooth; gradually add chilled cream until soft peaks form. Add powdered sugar and whip until stable.
  8. Frost cooled cupcakes generously and dust with cocoa powder before serving.
