  • 1 cup quinoa
  • 2 cups water
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup shredded carrots
  • 1 cup green onions, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped peanuts (or nuts of choice)
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a medium saucepan, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes or until water is absorbed.
  3. While quinoa cooks, chop red bell pepper, cucumber, carrots, green onions, and cilantro.
  4. In a small bowl, whisk together soy sauce, lime juice, honey/maple syrup, sesame oil, ginger, garlic, salt, and pepper for the dressing.
  5. Once quinoa has cooled slightly (about 15 minutes), fluff it with a fork and transfer it to a large mixing bowl. Add chopped vegetables and pour dressing over.
  6. Toss gently to combine all ingredients thoroughly. Cover and refrigerate for at least 30 minutes before serving.
