  • 2 boneless, skinless chicken breasts
  • 1/3 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 1 cup cooked white or brown rice
  • 1 cup broccoli florets, steamed
  • 1/2 cup shredded carrots
  • 1/2 cup red bell pepper, sliced
  • 1 tbsp sesame seeds, for garnish
  • 2 green onions, sliced

Instructions

  1. In a bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger to create the teriyaki sauce.
  2. Heat a large skillet over medium heat. Add bite-sized chicken pieces and cook for about 5-7 minutes until they are browned.
  3. Pour the teriyaki sauce over the chicken and bring it to a simmer. Stir in a cornstarch slurry and cook for an additional 2-3 minutes until the sauce has thickened.
  4. Serve the teriyaki chicken over cooked rice and top with steamed broccoli, shredded carrots, and sliced red bell pepper.
