  • ½ cup unsalted butter (cold, cubed)
  • ¼ cup powdered sugar
  • 1 large egg yolk
  • 2 tbsp cold water
  • 8 oz cream cheese (softened)
  • ¼ cup powdered sugar (for filling)
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries (sliced)

Instructions

  1. Preheat oven to 375°F (190°C). In a bowl, mix flour and powdered sugar. Cut in cold butter until crumbly. Stir in egg yolk and cold water to form dough. Roll out and fit into a tart pan, trimming excess.
  2. Line the crust with parchment paper and fill with pie weights. Bake for about 15 minutes until lightly golden. Allow to cool completely.
  3. In another bowl, beat softened cream cheese with powdered sugar until smooth; stir in vanilla extract.
  4. Spread the cream cheese mixture over the cooled crust and top decoratively with sliced strawberries.
  5. Chill the assembled tart for at least one hour before slicing. Serve chilled.
