  • ¼ cup dried cranberries
  • ½ red onion, thinly sliced
  • 5 cups arugula (or baby spinach)
  • 3 ounces feta cheese (crumbled; omit for vegan option)
  • 3 tablespoons extra virgin olive oil (for dressing)
  • 3 tablespoons lemon juice
  • 2 tablespoons mustard
  • 1½ tablespoons maple syrup
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss sweet potatoes with olive oil and salt, then roast for about 30 minutes until fork-tender.
  2. In a non-stick pan over low heat, toast seeds and dried cranberries until fragrant.
  3. For the dressing, whisk together olive oil, lemon juice, mustard, maple syrup, oregano, salt, and black pepper.
  4. Assemble by layering arugula on a platter, topping with roasted sweet potatoes, red onion, crumbled feta cheese, toasted seeds, and cranberries. Drizzle with half of the dressing.
