  • 4 ears fresh corn (shucked)
  • 1 1/2 cups cherry tomatoes (halved)
  • 1 English cucumber (diced)
  • 1/2 cup pitted black olives (halved)
  • 3 tbsp chopped chives
  • 1/2 bunch parsley (chopped)
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • Juice and zest of 1 lemon
  • 1 garlic clove (minced)
  • Salt and pepper to taste

Instructions

  1. Boil the corn for 2-3 minutes until tender but still crisp. Drain and cool.
  2. Cut kernels off the cob and place in a large bowl.
  3. Add cherry tomatoes, diced cucumber, halved olives, chopped chives, and parsley.
  4. In a jar, combine dressing ingredients: olive oil, apple cider vinegar, lemon juice and zest, minced garlic, salt, and pepper. Shake well.
  5. Drizzle dressing over the salad and toss gently to combine.
