  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, thinly sliced
  • 1/4 cup honey or agave syrup
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1/2 teaspoon lemon zest

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a springform pan and bake for 8–10 minutes until golden.
  2. In a large bowl, beat softened cream cheese until smooth. Add sour cream and sugar; mix until well combined. Beat in eggs one at a time, then stir in lemon juice.
  3. Pour filling over crust and bake for 45–50 minutes until edges are set but center jiggles slightly. Turn off oven and let cool inside for about an hour.
  4. Chill in the refrigerator for at least 4 hours or overnight until fully set.
  5. For topping: Heat mixed berries, peaches, and honey in a saucepan until juices release. Stir in cornstarch slurry; cook until thickened.
  6. Once cooled, spoon topping over cheesecake and refrigerate again for 15 minutes before serving.
