  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups fresh strawberries, hulled and divided
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into a springform pan. Bake for about 10 minutes until golden.
  2. In a bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla extract; mix until well combined.
  3. Fold half of the chopped strawberries into the cream cheese mixture.
  4. Pour half of the cheesecake mixture over the cooled crust. Layer whole strawberries on top, then pour remaining cheesecake mixture over.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  6. Slice and serve topped with extra strawberries if desired.
