  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 2 tablespoons water
  • 1 cup grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil
  • 1/4 cup unsalted butter
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound chicken breasts to an even thickness (about half an inch).
  3. Set up three bowls: mix flour with salt and spices in one; whisk eggs and water in another; combine cheeses with breadcrumbs in the third.
  4. Coat each chicken breast first in the flour mixture, then dip in the egg mixture, and finally press into the breadcrumb mixture.
  5. Heat oil in a skillet over medium heat and sear chicken for about 4-5 minutes per side until golden brown.
  6. Transfer to a baking sheet, top with mozzarella cheese, and bake for another 8-10 minutes until cooked through (internal temperature should reach 165°F/75°C).
