  • 1.5 pounds flank steak
  • 12 oz corn (grilled, boiled, or frozen)
  • 3 bell peppers (red, green, orange), sliced
  • 1 cup cherry tomatoes, quartered
  • 2 tablespoons lime juice
  • 23 tablespoons chicken broth
  • Cilantro lime rice
  • Fresh cilantro

Instructions

  1. Prepare the Corn Salsa: Combine corn, tomatoes, jalapeños, red onion, lime zest, lime juice, cilantro, salt, black pepper, chili powder (if desired), and cumin (if desired) in a bowl. Mix well and set aside.
  2. Marinate the Steak: In a large bowl or resealable bag, mix olive oil, lime juice, lime zest, chili powder, cumin, minced garlic, soy sauce (or Tamari), and salt. Add the flank steak and marinate for at least 30 minutes in the refrigerator.
  3. Cook the Steak: Heat a skillet over medium-high heat and sear the marinated steak for about 4-5 minutes on each side until browned and cooked to medium-rare (130-135°F). Let the steak rest before slicing.
  4. Sauté the Veggies: In the same skillet with chicken broth added to deglaze it, sauté minced garlic until fragrant. Add sliced onions and bell peppers along with fajita seasoning; cook for about 10-15 minutes until tender yet crisp.
  5. Assemble Your Bowls: In each bowl layer warm cilantro lime rice followed by sliced steak and sautéed veggies. Top with corn salsa and your choice of guacamole or avocado chunks.
