  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup white or brown rice
  • 2 cups water
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)

Instructions

  1. In a small bowl, combine olive oil, minced garlic, ground cumin, chili powder, salt, and pepper. Rub the marinade all over the flank steak and let it marinate for at least 30 minutes.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add your choice of rice, reduce heat to low, cover, and simmer for about 18-20 minutes until tender.
  3. Preheat your grill or grill pan over medium-high heat. Grill the marinated flank steak for about 4-5 minutes per side until cooked to your liking. Let it rest before slicing.
  4. In a large bowl, combine the cooked rice with black beans, corn kernels, diced tomatoes, red onion, cilantro, and lime juice.
  5. Divide the rice mixture into serving bowls. Top with sliced steak and avocado slices. Sprinkle with shredded cheese, and add sour cream or salsa if desired.
  6. Serve immediately while everything is still warm.
