  • 1 lb Flank or Skirt Steak
  • 1 tbsp Olive Oil
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • Salt and Black Pepper to taste
  • 2 medium Russet Potatoes
  • 1 tbsp Olive Oil
  • 1 medium Yellow Onion
  • 1 Red Bell Pepper
  • 1 Jalapeño (optional)
  • 8 Large Eggs
  • 1/4 cup Milk or Heavy Cream
  • 1 tbsp Butter
  • 68 large (1012 inch) Flour Tortillas
  • 2 cups Shredded Cheese (Cheddar and Monterey Jack)
  • 1/2 cup Fresh Cilantro
  • Your Favorite Toppings (Salsa, sour cream, guacamole, or avocado slices)

Instructions

  1. Pat the steak dry with paper towels before seasoning it generously with your spice mixture.
  2. In a hot skillet with olive oil, place your seasoned steak carefully and cook until medium-rare (3-5 minutes per side).
  3. Once cooked, let your steak rest on a cutting board for about 10 minutes.
  4. After resting, slice your steak thinly against the grain.
  5. Using the same skillet, add olive oil if needed and sauté onions, bell peppers, and jalapeños until softened.
  6. Add diced Russet potatoes to the skillet along with salt and pepper; cook until they’re tender inside yet crispy outside.
  7. In a bowl, whisk together eggs with milk or cream until pale yellow.
  8. Melt butter in another pan over low heat and pour in your egg mixture, gently scrambling until cooked through.
  9. Warm tortillas one by one on dry heat or microwave wrapped in damp paper towels.
  10. Lay out your tortilla flat; layer cheese, potato mixture, scrambled eggs, sliced steak, additional cheese & cilantro.
  11. Fold short sides inward then roll tightly away from you until sealed snugly.
  12. For a crispy texture, place rolled burritos seam-side down in hot skillet until golden brown (1-2 minutes each side).
  13. Slice each burrito diagonally before serving alongside desired toppings.
