  • 2 cups Panko bread crumbs
  • 1/2 cup Parmesan cheese, shredded (divided)
  • 1/2 cup all-purpose flour
  • 5 1/2 cups whole milk
  • 1 tablespoon Dijon mustard
  • 4 ounces cream cheese
  • 4 cups smoked Gouda cheese, shredded (divided)
  • 1 pound dried elbow pasta

Instructions

  1. Preheat the oven to 375°F. Butter a 3-quart casserole dish.
  2. In a medium bowl, mix Panko bread crumbs, crumbled bacon (if using), 1/4 cup Parmesan cheese, and thyme leaves. Melt 2 tablespoons of butter and combine with the breadcrumb mixture.
  3. In a saucepan, warm the milk over medium heat. In another skillet, melt remaining butter, add flour, and whisk for one minute to create a roux. Gradually whisk in warm milk until thickened.
  4. Stir in Dijon mustard, salt, nutmeg, black pepper, cayenne pepper, cream cheese, 3 cups smoked Gouda cheese, and remaining Parmesan into the sauce.
  5. Cook elbow pasta slightly less than package instructions until al dente; drain well.
  6. Combine pasta with cheese sauce until evenly coated.
  7. Transfer mixture to the casserole dish; top with remaining smoked Gouda and breadcrumb mixture. Bake for about 30 minutes until golden brown.
