  • 8 ounces cream cheese, cubed
  • 10.5 ounces condensed cream of chicken soup
  • 4 cups low-sodium chicken broth
  • 1 packet ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 cups frozen corn
  • Optional: baby spinach leaves and chopped green onions for garnish

Instructions

  1. Place chicken breasts at the bottom of the slow cooker.
  2. Add cream cheese, cream of chicken soup, chicken broth, ranch seasoning mix, garlic powder, onion powder, and black pepper. Stir gently to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  4. Remove the chicken and shred it using two forks; return it to the slow cooker.
  5. Stir in shredded cheddar cheese and frozen corn; cook for an additional 10-15 minutes until heated through.
  6. If desired, add baby spinach and chopped green onions during the last 10 minutes of cooking.
  7. Serve hot garnished with fresh parsley.
