  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, diced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1 (14 oz) can fire-roasted diced tomatoes
  • 1/2 cup tomato sauce
  • Salt and pepper, to taste
  • 4 large eggs
  • 1/4 cup crumbled cotija cheese (or feta)
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • Warm corn tortillas, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3-4 minutes until softened.
  2. Stir in minced garlic, jalapeño (if using), cumin, smoked paprika, and chili powder; cook for 1 minute until fragrant.
  3. Pour in fire-roasted diced tomatoes and tomato sauce; season with salt and pepper. Let simmer for 5-7 minutes until slightly thickened.
  4. Create small wells in the sauce and crack the eggs into each well. Cover skillet and cook for 5-7 minutes or until eggs are set to your liking.
  5. Remove from heat; sprinkle with crumbled cotija cheese and fresh cilantro.
  6. Serve hot with avocado slices and warm corn tortillas on the side.
