  • 6 bone-in (skin-on) chicken thighs
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup water
  • 2 cups broccoli florets
  • 1/2 cup grated Parmesan cheese
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Season chicken thighs with salt, pepper, garlic powder, paprika, and thyme. Heat olive oil in a large skillet over medium-high heat. Cook chicken skin-side down until golden brown (5-7 minutes), then flip and cook for another 5-7 minutes. Remove from skillet.
  2. In the same skillet, add minced garlic; sauté for about 30 seconds until fragrant. Stir in orzo, chicken broth, and water. Bring to a boil, then reduce to simmer and cover for about 8-10 minutes until orzo is tender.
  3. Meanwhile, steam or blanch broccoli florets until just tender (about 3-4 minutes). Once orzo is cooked, fold in broccoli.
  4. Return chicken to the skillet among orzo and broccoli; cover and cook for an additional 5 minutes. Stir in Parmesan cheese, lemon zest, and juice before serving.
