  • 15 ounces white beans (rinsed and drained)
  • 2 cups fresh spinach leaves

Instructions

  2. Add ½ cup diced onion, ¾ cup sliced celery, and ¾ cup sliced carrots; sauté for about 4-5 minutes until tender.
  3. Stir in 1 lb sliced chicken sausage and cook until lightly browned.
  4. Pour in 5 cups chicken broth along with ½ teaspoon dried thyme and 1 teaspoon dried parsley; season with salt and pepper to taste.
  5. Simmer for approximately 10 minutes until vegetables are tender.
  6. Gently fold in 15 ounces of rinsed white beans and 2 cups of fresh spinach; cook for an additional 3 minutes until spinach wilts.
