  • 3 medium apples
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar for caramel sauce
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter; press into the bottom of the pan. Bake for 10 minutes.
  3. Beat cream cheese until smooth; gradually add sugar and eggs one at a time, mixing well. Stir in vanilla extract and sour cream.
  4. Pour filling over the crust; bake in a water bath for about 55-65 minutes until slightly jiggly in the center.
  5. Cool in the oven with the door cracked for an hour; chill in the fridge for at least four hours.
  6. Sauté diced apples with remaining butter, brown sugar, cinnamon, and nutmeg until soft. Cool before topping cheesecake.
  7. For caramel sauce, melt sugar in a saucepan; stir in butter, heavy cream, and sea salt once caramelized.
