  • 1/2 cup soy sauce (sub Tamari)
  • 2 tablespoons chili garlic sauce
  • 3 teaspoons rice vinegar
  • 24 teaspoons fresh ginger (grated)
  • 1/4 teaspoon sesame oil
  • 4 tablespoons soy sauce (divided) (sub Tamari)
  • 1 lb salmon (cut into 1-inch pieces)
  • 3 tablespoons extra virgin olive oil (sub other oil of your choice, divided)
  • 2 teaspoons garlic (minced)
  • 3/4 cup yellow onion (cut into 1-inch pieces)
  • 1 1/2 cup frozen peas and carrots
  • 2 eggs (whisked)
  • 3 cups packed cooked rice (preferably day-old)
  • 1/8 teaspoon ground black pepper
  • 3 green onions (sliced)
  • Red pepper flakes to taste
  • Kosher salt to taste

Instructions

  1. Marinate 1 lb salmon pieces in 1/2 cup soy sauce for 15-20 minutes.
  2. Mix 4 tablespoons soy sauce, garlic, ginger, chili garlic sauce, and rice vinegar in a bowl for the fried rice sauce.
  3. Heat olive oil on medium-high heat, cook marinated salmon until it reaches 145°F, then set aside.
  4. Sauté minced garlic and chopped onion in the same pan until fragrant; add frozen peas and carrots until heated through.
  5. Scramble whisked eggs in the pan; combine with rice and cooked veggies.
  6. Toss everything with half of the fried rice sauce; serve hot with additional sauce on top.
