  • 2 ½ cups bread flour
  • 2 teaspoons sea salt
  • ¼ cup extra-virgin olive oil (divided)
  • 2 tablespoons melted plant-based butter
  • â…“ cup extra virgin olive oil (for topping)
  • 23 sprigs fresh rosemary, minced
  • 3 garlic cloves, minced

Instructions

  1. In a large bowl, combine yeast, honey, and warm water. Let it rest for 5-10 minutes until foamy.
  2. Stir in flour and salt until a cohesive dough forms.
  3. Drizzle with 2 tablespoons olive oil and coat the dough; cover and refrigerate overnight.
  4. The next day, deflate the dough and cut into twelve portions; place in a greased muffin pan.
  5. Cover and let rise for about 2 hours.
  6. Prepare the topping by heating olive oil with minced rosemary and garlic.
  7. Preheat oven to 450°F and make dimples in each muffin's surface; spoon the topping over them.
  8. Bake for about 20 minutes until golden brown. Brush with melted butter before serving.
