  • Sea salt to taste
  • Pepper to taste
  • 45 tbsp water
  • Chopped parsley for topping
  • Chopped almonds for topping

Instructions

  1. Preheat your oven to 375°F.
  2. Wash and slice the sweet potatoes into wedges. Toss them with olive oil, cumin, Italian seasoning, salt, and pepper on a baking sheet.
  3. Roast the sweet potatoes for 45-55 minutes until caramelized.
  4. Cook the lentils by boiling them in water according to package instructions.
  5. Wrap the halved garlic bulb in foil with olive oil and roast alongside the sweet potatoes.
  6. Combine parsley, tahini, lime juice, olive oil, cumin, salt, pepper, and water in a bowl to make the dressing.
  7. Once roasted, squeeze out the garlic into the dressing and mix well.
