  • 1.5 teaspoons Italian seasoning
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • Optional: 3 tablespoons finely grated Parmesan cheese

Instructions

  1. Preheat your oven to 400 degrees F.
  2. If thick, cut carrots in half lengthwise and slice diagonally into 1½-inch pieces. Place them on a prepared baking sheet along with the broccoli florets.
  3. In a small bowl, combine Italian seasoning, salt, garlic powder, onion powder, and black pepper. Drizzle olive oil over the vegetables, sprinkle the spice mix on top, and toss to coat evenly.
  4. Spread the veggies in an even layer on the baking sheet and roast for about 20 minutes until tender and lightly browned, tossing halfway through. If desired, sprinkle with Parmesan cheese before serving hot.
