  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • Zest of 1 lemon
  • ½ cup raspberry jam
  • ½ cup lemon curd
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • Fresh raspberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream the softened butter and sugar until light and fluffy. Beat in the eggs individually, then mix in vanilla extract and lemon zest.
  4. Alternate adding the dry mixture and buttermilk to the butter mixture until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
  6. Once cooled, hollow out the centers of each cupcake and fill with equal parts raspberry jam and lemon curd.
  7. Beat together frosting ingredients until smooth; frost the cooled cupcakes generously.
  8. Garnish with fresh raspberries before serving.
