  • ⅔ cup sugar
  • ½ cup unsalted butter
  • 1 cup white sugar
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ⅓ cup milk
  • 1 tsp vanilla extract
  • ½ cup raspberry coulis
  • 1 cup unsalted butter
  • 1 can sweetened condensed milk
  • ½ cup raspberry coulis
  • 12 fresh raspberries

Instructions

  1. First off, we need to make our luscious raspberry coulis. In a tall saucepan, combine raspberries with sugar over medium heat. Cook until the berries break down.
  2. Preheat the oven to 350°F (180°C) and line your cupcake pan. Cream together room-temperature butter and sugar until light and fluffy. Add the egg and combine until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Mix half of the dry ingredients into the wet mixture. Stir in milk, vanilla extract, and half of the cooled raspberry coulis.
  4. Fill cupcake liners evenly with the batter and bake for about 17 minutes, or until they spring back when lightly pressed.
  5. Once cooled, remove part of each cupcake's center and fill with raspberry coulis.
  6. For the buttercream, whip softened butter until fluffy. Gradually incorporate sweetened condensed milk and mix in more raspberry coulis.
  7. Pipe or spread buttercream on top of each cupcake and decorate with fresh raspberries.
