  • 2 tablespoons granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon lemon juice
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 ounces full-fat cream cheese, softened to room temperature
  • 2/3 cup granulated sugar
  • 2 large eggs + 1 egg yolk
  • 1/3 cup sour cream, at room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Instructions

  1. Prepare the raspberry sauce by simmering raspberries, sugar, cornstarch, and lemon juice in a saucepan until thickened. Strain to remove seeds.
  2. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  3. For the crust, mix graham cracker crumbs, sugar, and melted butter; press into the pan and bake for 8-10 minutes until golden.
  4. Beat cream cheese and sugar until smooth; add eggs, sour cream, vanilla extract, and flour until combined. Pour over cooled crust.
  5. Swirl in raspberry sauce using a knife for a marbled effect.
  6. Bake for 30-35 minutes until set but slightly jiggly in the center. Cool gradually in the oven before chilling in the refrigerator for at least three hours.
  7. Cut into squares before serving.
