  • 2 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 2 medium carrots, sliced
  • 8 oz mushrooms, sliced
  • 1 medium zucchini, diced
  • 1 medium red bell pepper, diced
  • 1/2 lb rotini (uncooked)
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 2 cups vegetable broth
  • 24 oz pasta sauce
  • 4 oz mozzarella, shredded (optional)
  • 2 Tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and diced onion; sauté until translucent.
  2. Stir in sliced carrots, mushrooms, zucchini, and red bell pepper. Cook for about 5 minutes until slightly tender.
  3. Add uncooked rotini, dried basil, dried oregano, vegetable broth, and pasta sauce; stir well.
  4. Bring to a boil then reduce heat to low. Cover and simmer for about 15 minutes until pasta is al dente, stirring occasionally.
  5. If desired, stir in shredded mozzarella until melted before serving warm.
