  • 1 cup pumpkin puree
  • 1/2 cup brown sugar (or maple syrup)
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with paper liners or cooking spray.
  2. In a large bowl, whisk together the flour, oats (if using), baking powder, baking soda, salt, and spices.
  3. In another bowl, mix pumpkin puree, brown sugar (or maple syrup), milk, eggs, melted butter, and vanilla until smooth.
  4. Gradually combine the wet ingredients with the dry ingredients until just mixed—do not overmix.
  5. Optional: Fold in chocolate chips or nuts if desired.
  6. Fill each muffin cup about three-quarters full and bake for 18–22 minutes until a toothpick comes out clean.
  7. Cool in the tin for five minutes before transferring to a wire rack.
