  • 0.5 cups sunflower oil

  • 2 cups all-purpose flour
  • 1.5 teaspoons pumpkin pie spice
  • 0.5 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.33 cups whole milk
  • 5 oz cream cheese (softened)
  • 2.5 tablespoons granulated sugar
  • 1 teaspoon all-purpose flour
  • 0.5 teaspoon vanilla extract
  • 2 teaspoons whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the pumpkin puree, brown sugar, granulated sugar, eggs, sunflower oil, and vanilla until smooth.
  3. In another bowl, whisk together flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt.
  4. Gradually mix dry ingredients into the wet mixture with whole milk until just combined.
  5. In a small bowl, mix cream cheese with sugar, flour, vanilla extract, and milk until smooth.
  6. Spoon half of the batter into each muffin cup; add cream cheese filling then cover with remaining batter.
  7. Bake for about 18 minutes or until a toothpick comes out clean.
  8. Allow cooling before serving.
