  • 1/4 cup maple syrup
  • 1/4 cup powdered sugar
  • 1/3 cup almond flour
  • 8 ounces white chocolate melting wafers
  • 2 teaspoons coconut oil
  • Pinch of salt
  • 1 teaspoon cocoa powder
  • 1 tablespoon water

Instructions

  1. In a mixing bowl, combine peanut butter, maple syrup, powdered sugar, almond flour, and a pinch of salt. Mix until well blended.
  2. Shape the mixture into egg-like ovals, about 2 tablespoons each, and place them on a parchment-lined baking sheet.
  3. Freeze the shaped eggs for about 15-20 minutes to firm them up.
  4. Meanwhile, melt white chocolate wafers and coconut oil together in the microwave until fully melted.
  5. Dip each semi-frozen egg into the melted chocolate using a toothpick, allowing excess chocolate to drip off.
  6. For decorative speckles, mix cocoa powder with water and flick it over the dipped eggs using a pastry brush.
  7. Allow the chocolate coating to set in the fridge for about 10 minutes.
