  • 2 tablespoons unsalted butter, melted (for streusel)
  • 2 tablespoons all-purpose flour (for streusel)
  • 2 tablespoons light brown sugar (for streusel)
  • 1/4 teaspoon ground cinnamon (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a large bowl, cream softened butter with granulated and brown sugars until fluffy. Beat in egg and vanilla until combined.
  4. Gradually mix dry ingredients into wet mixture until just combined. Gently fold in diced peaches.
  5. For the streusel topping, combine oats, melted butter, flour, brown sugar, and cinnamon in a small bowl.
