  • 1 pound boneless skinless chicken breasts
  • 8 ounces whole baby bella mushrooms
  • 1 medium red onion
  • 2 cloves garlic
  • 1 cup beef broth
  • ¼ cup heavy cream
  • 10 ounces penne pasta
  • 6 teaspoons olive oil (divided)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • kosher salt
  • black pepper
  • fresh parsley

Instructions

  1. Season chicken with salt and pepper. Heat 4 teaspoons olive oil in a skillet over medium-high heat and cook chicken until golden brown. Remove and set aside.
  2. In the same skillet, add 2 teaspoons olive oil and sauté sliced mushrooms until golden. Remove mushrooms.
  3. Melt butter in the skillet and cook sliced onions low and slow until caramelized (20-25 minutes). Add minced garlic and sauté for an additional minute.
  4. Stir in flour to thicken before adding apple vinegar; scrape up any bits from the pan.
  5. Add beef broth and simmer for 3-4 minutes. Stir in cream, parmesan cheese, and parsley.
  6. Return chicken and mushrooms to the skillet; toss with cooked penne pasta before serving.
