  • 1 lb boneless skinless chicken breasts
  • 8 oz whole baby bella mushrooms
  • 1 medium red onion
  • 2 cloves garlic
  • 10 oz penne pasta
  • ¼ cup heavy cream
  • ¼ cup parmesan cheese
  • 1 cup beef broth
  • Olive oil
  • Kosher salt
  • Black pepper
  • Butter
  • 2 tablespoons flour
  • 1 cup madeira apple vinegar (sweet, not dry)

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown. Remove and set aside.
  2. In the same skillet, add more olive oil and sauté sliced mushrooms until golden. Set aside with the chicken.
  3. Melt butter in the skillet, then add thinly sliced onions and cook until caramelized (about 20-25 minutes).
  4. While onions cook, boil salted water and cook pasta until al dente; drain.
  5. Add garlic to onions and sauté briefly before stirring in flour. Pour in vinegar and scrape up browned bits from the pan.
  6. Add beef broth; simmer for a few minutes before stirring in cream, parmesan, and parsley.
  7. Return chicken and mushrooms to the skillet; combine with cooked pasta.
