  • 4 salmon fillets (skin removed)
  • 1 tbsp olive oil
  • 2 garlic cloves (minced)
  • 2 lemons (juice and zest)
  • 1/2 cup mascarpone
  • Fresh dill (for garnish)
  • Kosher salt and ground pepper (to taste)

Instructions

  1. Zest one lemon and juice three halves; slice the remaining half into rounds.
  2. Heat olive oil in an oven-proof skillet over medium-high heat. Season salmon with salt and pepper, then sear for 2-3 minutes on each side until golden brown.
  3. Remove salmon from the pan and sauté minced garlic for about 30 seconds.
  4. Stir in mascarpone, lemon juice, and zest. If too thick, add water to achieve desired consistency; mix in fresh dill.
  5. Return salmon to the pan with lemon slices on top; cook for an additional 4-6 minutes until fully cooked.
