  • 6 boneless chicken thighs and/or breasts
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons extra virgin olive oil
  • 6 cloves garlic (2 finely chopped + 4 whole)
  • 1 cup fresh parsley (chopped)
  • 1/4 cup fresh oregano (chopped)
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 lemons (1 halved, 1 sliced)
  • 4 tablespoons salted butter (sliced into 6 pieces)
  • 1 cup fresh basil (chopped)
  • 1/2 cup green olives (roughly chopped)
  • 2 tablespoons apple cider vinegar or white grape juice vinegar
  • 1/21 teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 425°F.
  2. On a baking sheet, combine chicken with 2 tablespoons of olive oil, finely chopped garlic, parsley, oregano, salt, and pepper. Toss to coat.
  3. Arrange halved lemons and whole garlic cloves around the chicken; top each piece with a slice of butter.
  4. Roast for 35-45 minutes until golden brown and cooked through.
  5. Meanwhile, mix together remaining olive oil, herbs, olives, and vinegar in a bowl for the dressing.
  6. Once the chicken is done, incorporate mashed roasted garlic and chopped lemon into the dressing.
  7. Serve the chicken topped with goat cheese and dressing.
