  • 1 cup ricotta cheese
  • 2 large lemons (zest and juice)
  • 4 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 1 cup fresh basil leaves (chopped)
  • Salt and pepper to taste

Instructions

  1. Bring salted water to a boil in a large pot. Cook rigatoni until al dente according to package instructions, reserving 1 cup of pasta water before draining.
  2. In the same pot, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. Return drained rigatoni to the pot and add ricotta cheese, lemon juice, lemon zest, and reserved pasta water. Stir until creamy and well combined.
  4. Season with salt and pepper to taste.
